Prep Soak: For the absolute cleanest, mildest flavor, soak thawed kidney halves in cold salted water, milk, or water with a splash of vinegar for 30 minutes, then rinse and pat dry completely.

Flash-sear in hot butter or tallow for just 1.5 to 2 minutes per side until browned on the outside and warm/pink in the center.
