The truth is, most grocery store eggs—even the ones labeled "cage-free" or "free-range"—come from hens that never see the sun or touch real grass. At KC Farm Stand, we follow a different philosophy. We believe in the "Perfect Chicken" model pioneered by regenerative farmers like Joel Salatin. Our hens live out on the open pasture, following right behind our cattle and sheep. They spend their days doing exactly what chickens were born to do: scratching the soil, hunting for bugs, taking dust baths, and soaking in the sunshine. This deep respect for their natural instincts doesn't just heal our land; it produces exceptionally nutrient-dense eggs with thick shells and vibrant, golden-orange yolks.

Why are you always sold out?

Unlike factory farms that use artificial lighting to force hens to lay year-round, our flock lives in rhythm with the seasons. Their production naturally fluctuates based on daylight, weather, and their molting cycles. When they are sold out, they are sold out!

Do I need to refrigerate these eggs?

If you pick up unwashed eggs from our farm stand, they still have their natural protective "bloom" and can safely sit on your counter. However, if the eggs have been washed (which we do for our delivery bundles), they must be stored in the refrigerator.

What do your chickens eat?

Our hens spend their days on Missouri pasture, foraging for a natural diet of bugs, worms, clover, and grasses. We supplement their foraging with a high-quality, locally sourced, non-GMO grain to ensure they get the minerals they need. This diverse diet is exactly why our yolks are a deep, vibrant orange compared to the pale yellow yolks found in stores.

Can I return my empty egg cartons?

Yes, please! We love a closed-loop system. If your cartons are clean and in good shape, feel free to leave them at the Farm Stand in Holt during your next pickup. It’s a small way we can work together to reduce waste and keep our operations as sustainable as possible.

Why are the eggs different sizes and colors?

Nature doesn't produce "Large Grade A" clones. We raise a diverse flock of heritage-breed hens, which means your dozen will likely be a beautiful "rainbow" of shades from deep chocolate brown to seafoam green and cream. You’ll also see natural variations in size—just like the hens themselves, every egg is unique!

What is the difference between "Pasture-Raised" and "Cage-Free"?

We prioritize the health of our birds and our soil above all else. From Spring through late Fall, our hens are on open pasture 24/7. However, during the harsh Missouri winter, we move them into our High Tunnel.

This isn't "confinement"—it's a winter spa. They live on Deep Mulch Bedding, where they can scratch, dust bathe, and stay warm without the stress of wind and snow. This system also serves a dual purpose: the hens spend the winter "processing" the carbon-rich mulch into high-quality compost, which we then use to fuel our gardens the following Spring. It’s a closed-loop system that keeps our hens happy and our soil fertile.

Why do you use "Deep Mulch Bedding" in the winter?

Think of it as a slow-cooker for soil health. By layering straw, wood chips, and leaves, we create a living floor. As the hens add manure and scratch the surface, the bedding begins to compost in place. This natural decomposition generates a small amount of biological heat, keeping the hens' feet warm naturally while creating the "black gold" (compost) that grows our summer vegetables.

Do the hens still get to see the sun in the winter?

Yes! Our High Tunnel is essentially a giant greenhouse. It captures the winter sun, providing a bright, warm environment even on the coldest January days. This natural light is why our hens continue to produce high-quality eggs while most farm flocks go dormant for the winter.

Can I buy the compost created by the winter hens?

Currently, we use every bit of this premium compost to fuel our own on-farm gardens and high-tunnel produce. It’s the "secret sauce" behind our nutrient-dense vegetables and vibrant summer flowers!
