If you’ve ever had lamb that tasted overly "gamey" or tough, it was likely raised in a stressful, high-density environment or finished on an unnatural diet. We raise our flock differently. Our sheep spend their days grazing our chemical-free regenerative pastures in Holt, Missouri. They are never given hormones or antibiotics. After the harvest, the meat is dry-aged for 5 to 10 days to naturally tenderize the cuts and deepen the flavor profile. What makes "Regenerative" and "Grass-Fed" lamb different?
Unlike commodity lamb, our sheep are never fed grain. They rotate through fresh pastures daily on our farm in Holt, MO. This "regenerative" approach builds healthy soil, which in turn creates nutrient-dense meat with a clean, mild flavor and higher levels of Omega-3s. Because they eat only diverse forages, you’re getting the healthiest protein possible.
Does your lamb have that "gamey" taste?
Not at all. We raise hair sheep (Katahdins), which are known for their incredibly mild and buttery flavor. Because they don't produce lanolin (the oil found in wool sheep), the "gamey" flavor most people associate with lamb is non-existent. Even those who think they "don't like lamb" are usually won over by our mild, pasture-raised cuts.
Is the meat fresh or frozen?
To ensure peak quality and food safety, our meat is professionally processed at a USDA-inspected facility, dry-aged for 5–10 days to enhance tenderness, and then immediately vacuum-sealed and flash-frozen. This locks in the freshness from our farm to your freezer.
Why don't you sell whole or half lambs?
A whole lamb typically yields about 35 to 40 pounds of meat. We found that managing custom butcher instructions for that yield was a hassle for our customers. Instead, we optimized the process by creating our 18 lb "Premium Lamb Bundle," which gives you all the very best cuts without the stress of navigating a complicated cut sheet.
How much freezer space do I need for a Premium Bundle?
One of the best parts of our 18 lb "Best of the Lamb" Bundle is that it doesn't require a chest freezer! It will easily fit into a standard kitchen freezer, taking up about the same amount of space as two large shoeboxes.
Where do you deliver in the Kansas City area?
We offer free local delivery to most of the KC Metro and Northland areas (including Liberty, Kearney, Smithville, Independence, Blue Springs, Lee Summit, Kansas City, Parkville, Riverside, and Platte City) on orders over $250. You can also select "Farm Stand Pickup" at checkout to visit us in Holt and see where your food is grown.
How do I cook the "Lamb Lollipops" (Rib Chops)?
We’ve done the hard work for you by "Frenching" our rib chops into individual lollipops. They are best when seared quickly over high heat (grill or cast iron) for about 3 minutes per side until they reach medium-rare.
When will the lamb be ready?
Our flock grazes purely on pasture, meaning they grow at nature's pace. We typically harvest once a year in the late summer. Once the meat has finished its 5-to-10-day dry-aging process, we immediately notify our Waitlist.
